Healthy food doesn't need to be tasteless, blend and lacking fun...These stuffed peppers are low on calorie yet very scrumptious. You can find dolma peppers in Turkish supermarkets. They make a great healthy supper main course. If you insist on having meat just add 150 gr mince meat in the stuffing. Why not serve with oven chips or potato wedges with a garlic yoghurt dip.
Serves 4
INGREDIENTS
8 Small Green Turkish Dolma Pepper (Top bit chopped off and deseeded)
1 Cup Easy Cook Long Grain Rice (Washed and Drained)
1/2 Tin Chopped Tomatoes
1 Small Onion (Finely Chopped)
3 Spring Onions
2 Tablespoons of Fresh Lemon Juice
3 Tablespoons of Olive Oil
A Handful of Fresh Parsley (Chopped)
A Handful of Fresh Mint (Chopped)
A Handful of Fresh Dill (Chopped)
1 Teaspoon Sumac (If you can find)
1 Teaspoon Oregano
Salt and Black Pepper
1) Prepare the peppers. Carefully remove the top bit with the stem. Take all the seeds out and wash them. Prick the bottoms with the tip of a sharp knife.
2) Mix all the ingredients together, season with the herbs.
3) With a teaspoon fill the stuffing in the peppers. You can decorate the peppers using cherry tomato halves as lids.
4) Line them next to each other on a heavy bottom oven proof dish.
5) Add some boiling water to the dish almost 1/4 length of the peppers.
6) Cook on a low heat for about 40 minutes. Check if they are done taking a tiny bit from the top of the stuffing.
7) Once the stuffing is cooked, if you like you can pop them in the oven for about 10 minutes on 200C yo crisp the tops.
8)Serve hot or cold.
